This is an easy recipe for energy bites that is very forgiving with ingredient choices that makes it super easy to get more superfoods into your diet. You can make it as directed, or sub out ingredients you have on hand. One thing is for certain, these little bites need to make their way into your life asap!
The ingredients to make this are simple.
It all starts with the base:
- Pitted Dates
- Cocoa Powder
Then, we have our superfood add ins:
- Hemp Seeds
- Maca Root Powder
And finally, ingredients for rolling:
- Maqui Berry Powder
- Beet Root Powder
- Coconut Flour (this brand is my favorite)
- Coconut Flakes
To make these bites, its as simple as adding all ingredients into your food processor, and letting the machine do the job. You want to make sure everything is blended well and has formed a sticky consistency. If it comes out like the photo below, it hasn’t processed enough yet.
If you keep processing for a few more seconds, the consistency will change to something like this:
That’s when you’ll know its ready for rolling.
Because this is such forgiving recipe, you can add or subtract from this list of ingredients as you like. The base for these superfood bites is dates and almonds. Don’t have almonds? Use walnuts instead. Don’t like Maca powder, leave it out or sub a different superfood powder that you are trying to get more of into your diet. The only thing I would say not to sub with anything else is the dates. It gives these superfood bites its sticky consistency and is the reason why they hold up together without the need for added oils.
Because of its amazing health benefits, I do highly recommend using maca powder in these bites. Since maca doesn’t taste the greatest on its own, these bites are a great way to add them into your diet daily.
Making energy bites is a wonderful way to introduce superfood ingredients into your daily snack game by keeping cravings in check and without going through so much effort to eat it.
If you enjoy these superfood maca bites, try my Christmas cake bites. Using coconut flour for the base and maple syrup instead of dates to sweeten. They are a little more of a treat than a superfood but on the healthy side of the desert spectrum.
And they are super yummy!Print
Nutrient packed superfood maca bites are sweet and chocolatey without any refined sugar! Simple to make and last in the fridge for a week or the freezer for months. An easy way to add more plant protein and healthy superfoods to your diet.
For the superfood maca bites:
- 2/3 cup almonds
- 12 pitted dates (about 1 cup packed)*
- 1/2 cup cocoa powder
- 1 tbsp Maca root powder
- 1 tbsp hemp seeds (optional)
- coconut flour
- coconut flakes
- red beet powder
- cocoa powder
- In a food processor, add all ingredients and process until incorporated and has a sticky texture. If it’s still separated and dry, it hasn’t been processed enough.
- Scoop out a tablespoon size at a time and roll into balls.
- Finally, roll in desired topping. I went with coconut flour, coconut flakes, and red beet powder.
- Place on parchment paper and refrigerate for a couple hours before eating.
- Store in the fridge for a week or freezer for much longer.
*I used Medjool dates, but you can use whatever is available. If the dates appear super dry, give them a quick 5 minute snack in warm water to soften them up. This will help them blend better. I did not have to do this as my dates had a good amount of moisture.
