This cilantro lime cashew sauce comes together with just 4 fresh ingredients:
- Raw Cashews
- Sea Salt
They are so versatile, and healthy. Sometimes people tend to avoid high fat foods like seeds and nuts because they fear it will cause undesired weight gain. but cashews can, in fact, prevent weight gain! First, start by soaking the cashews in hot water for about 30 minutes. I used cashew pieces that are broken up, so I can usually get away with soaking for around 20 minutes to get the cashews softened enough for blending.
Then, in a high powered blender, combine the ingredients with a little bit of water to get it blending nicely. And then blend until completely smooth. Pour the sauce into a glass container and store in the fridge. Cilantro lime cashew cream keep for a few days.
If you need to store it longer:
I recommend freezing it. A little trick I use to freezing creams and sauces is to pour into ice cube molds and freeze, then transfer to a zip lock bag. This way, you can use little single serve cubes at a time as needed. Or, if you don’t need them in single serve portions, just pour into a freezer safe zip lock and place in freezer.
That’s it! Now you have a tangy, creamy, yummy sauce that goes well with my cauliflower curry, chickpea tikka masala, tacos, enchiladas, on top of nachos, over a spicy rice, or even in salads. I especially love this sauce on anything spicy!

1 cup raw cashews
1/2 bunch cilantro
juice of two limes
1 tsp sea salt
3/4 cup water
First, soak cashews for 30 minutes in hot water.
To a blender, add softened cashews, juice of both limes, salt, and water. Blend for a few seconds.
Add in the cilantro and blend again until smooth.
Taste and adjust salt and lime as needed.
Store in a glass container in the fridge for 2 days or freeze for longer storage.
